rainbow shortbread cookies for st. patty's day

happy green day everybody!

before i get started on this post, 
i have been wondering,


Why are there so many 

TREATS about rainbows?
And what's on the other side

like is there a secret code to blogging why so many have to make a rainbow treat?

Rainbows are visions 
But only illusions
And rainbows have nothing to hide

nothing to hide?
that's for sure, cuz they are everywhere!

So we've been told
And some choose to believe it
I know they're wrong wait and see

believe it!

Someday we'll find it
The rainbow connection
The lovers, the dreamers and me

rainbow connection?
by golly i think i found it!
with these:
when i made these bottles
i got a few comments i needed to fill them up with green milk.
 so as you can see, that's exactly what i did.

but i needed cookies to go along with it too. 
wanna see how i did it?

first i got these supplies.
and i mixed the dough and then separated it into 6 bags.
i put a lot of dough for the red, a little less for the orange, a little more less for the yellow, a little little more less for the green and well, you get the picture. 
(red-orange-yellow-green-blue-purple)
then i started to roll out the dough,
and wrapped it in backward order around the donut pan, like so:
start backward when wrapping the dough around the center part of each donut in the VBGYOR order. the wraps don't have to be perfect unless you are making it for the president or your boss or whoever you want to impress. 
see how perfectly imperfect they are?

i was just making these for my family.
thank god they are easily impressed.
LOL
so i baked them and hoped for the best.

 i actually had my eyes closed when the oven bell rang that the cookies were done.

then i did a happy dance when i saw how they turned out!
and i waited just long enough to grab a sheet of parchment paper and turned them upside down as they slid right outta the pan.

yippee!
they looked so purdy to me!

even the back sides of them weren't too bad.

so i took a knife while they were still warm and cut each of them in half.
and then i separated them a bit to cool.
lemme tell you guys, this was a total fly by night plan of mine to make these cookies.

we went out to eat tonite and when we got back it was 9pm and i started making these.
and right now it is 1:38 am and i am just finishing off this post.
i would've been done earlier but i had a little bit more yellow and blue dough leftover so i mixed them together and made some clovers too.
and then my daughter and i ate some rainbows and clovers together at 11:30 pm while my son and hubby were asleep.
i love having a rainbow connection with my daughter.

and when we were done eating and chatting, 
it was midnite. 
and we just celebrated st. patty's day.
