it's a good thing we have our moms.
to tell us like it is.
with no sugar coating.
and even if they are on earth or an angel in heaven like mine, they are always with us.
sometimes they tell us to do something
even if we are afraid of doing it.
no matter what our age.
cuz it'll be worth it in the end.
remembering that advice,
i try to apply it to as much as i can.
like making macarons for instance.
have you made them before?
i never did cuz i read about all the nightmares it gave when making them.
but i said what the heck,
if they turn out like crap,
i will be outta eggs and almond flour.
i think i can live with that.
so when i found the almond flour at home goods i knew macarons were calling my name to make them already.
i used martha's recipe here, and went for it. except i already had the flour like i said, and i used another filling which i will tell you about in a sec.
and this is what happened:
so if you ignore the slightly brown bottom,
i think they came out ok for the first try.
obviously i cooked them a teeny bit longer than they should have but i'll take them cuz i did not follow any macaron advice.
like the ones where it says to age the eggs.
i used them right outta the fridge.
and the one advice where you need a food processor to grind up almonds.
nope, i just sifted the flour with the sugar instead.
and the advice that you have to use parchment paper.
well, i didn't have any and didn't realize it til they were ready to be piped so i used my silpat mat instead.
ok that was not the best ignored advice, as the macarons stuck a little and i was nervous but what happened was i ruined 4 outta the 16 which worked out well cuz i just ate them.
and when i did, i was in heaven!
dang they were DELISH!
i made the filling using this recipe:
MACARON LEMON FILLING
(adapted from this book)
4 tbsp. unsalted butter, softened
1/2 tsp. lemon emulsion (much better than extract!)
1 cup confectioner's sugar
beat the butter and lemon emulsion til pale and fluffy. gradually beat in the confectioner's sugar until smooth and creamy.
easy right?
but the macarons were just basic lemon macarons.
and basic for some reason does not always sit well with me, especially when i am making it for a special occasion.
so i did this:

ok i'm done.
now let's check them out.
so in celebration for moms everywhere, let's all sing!

DeleteAs I scrolled along, I just kept having this nagging feeling that "there's gotta be something else to these plain macaroons!"...and of course, I was right! They could also be made up as clown faces for a kid's birthday party.
